The Badia family are 5th generation, master vinegar makers operating since 1908 in Spain.
Crafted with refined Pedro Ximenez must be matured for 12 months in American oak.
Sweet and sour, complex and long. The ageing process makes this a unique vinegar. Versatile for use in vinaigrettes, sauces for meat, pasta and vegetable dishes.
All catering requires at least 3 days minimum notice.

About Us
Saludos was a Spanish restaurant in Albury by mother / daughter duo Jan and Loni. We launched in July 2016 and in July 2025 we decided to close. The building was scheduled to be demolished and rather than immediately moving we have decided to take a
small step back.
But! The Saludos name will live on through our catering, Cookbook: Saludos at Home and Cooking Classes.
Thank you for dining, lunching, cooking in our workshops and attending our flamenco nights over the 9 years we were open! It's been such a dream and every aspect of this restaurant has meant the world to us.
We look forward to connecting with you when you cook our recipes - any questions we're always happy to hear from you and see photos of your cooking! Or perhaps we'll see you through cooking classes or catering events.
